Mama’s Kitchen: Bagel with Avocado & Tomato

One of my favorite spots in North Beach is Cafe Sappore. We lived around the block and we’d have breakfast there every weekend. No flavored cream cheeses here, just open face bagel sandwiches piled high with healthy ingredients. I miss my bagel sandwiches so I’ve recreated one of my favorites. It’s super easy, healthy and delicious – and only takes 5 minutes to make.

Bagel with Avocado & Tomato

1 Bagel (I use 1 mini whole wheat bagel – only 70 calories!)
Few slices of avocado (enough to cover both halves of your bagel)
Few slices of tomato (enough to cover both halves of your bagel)
2 Basil Leaves thinly sliced
Dijon Mustard
Extra Virgin Olive Oil
Balsamic Vinegar
Salt & Pepper
**Cheese is optional – a slice of Jarlsberg is really nice with this.

Slice the bagel in half and toast. While the bagel is toasting slice the avocado, tomato and basil. When the bagel is toasted to your liking, spread dijon mustard on both halves. Add avocado and press down on the avocado so it spreads on the bagel (by doing that it’s easier to eat and doesn’t slide), then layer the tomato and basil. Drizzle a dab of olive oil and balsamic vinegar. Finish off with salt & pepper.
